A sardine plate: open tins with pickles, mustard, jammy eggs, radishes, crackers and lemon

A meal, a tasting flight and the easiest dinner party in the category:

  1. Choose two contrasting tins - one mild, one spiced or smoked - and open both.
  2. Arrange the fish on a large plate or board, keeping the two tins' fish separate.
  3. Add small piles of cornichons, radishes and pickled onions around the fish.
  4. Add a halved jammy egg (6½ minutes in boiling water) per person.
  5. Put a spoonful of grainy mustard in the middle, add good crackers and lemon wedges, and serve.

Start with a beginner tin or the Starter Kit.
